Pizza Tacos (Pizza Pieghina)

Pizza tacos, or pizza pieghina, is an original and super tasty street food that will surprise you with the first bite! The soft yet elastic and well-aerated dough of contemporary pizza encapsulates all the tradition of Neapolitan pizza, while the crescent shape resembles that of tacos, making it perfect for holding rich and hearty fillings.

In this version, mortadella pairs wonderfully with the smoky flavor of eggplant, while stracciatella adds creaminess to the filling. But Pizza Tacos is also an ideal base for customization: feel free to stuff it with cured meats, vegetables, cheeses, or seafood, creating new combinations each time.

Ingredients

  • 500g of all-purpose flour
  • 250ml of warm water
  • 10g of active dry yeast
  • 10g of salt
  • 1 tsp of sugar
  • 2 tbsp of olive oil
  • 300g of mortadella
  • 200g of smoked eggplant
  • 250g of stracciatella cheese

Instructions

  1. In a bowl, mix the warm water with sugar and yeast, letting it sit for 10 minutes until frothy.
  2. Add flour and salt to the yeast mixture, and knead until you get a smooth dough.
  3. Incorporate the olive oil and continue kneading for another 5 minutes.
  4. Let the dough rise for about 1 hour or until doubled in size.
  5. Divide the dough into smaller balls and roll them out into thin discs.
  6. Place the fillings of mortadella, smoked eggplant, and stracciatella on one half of the dough, then fold over to create a taco shape.
  7. Cook on a hot grill or skillet for about 5-7 minutes on each side until golden brown.
  8. Serve hot and enjoy your Pizza Tacos right away!
