Ingredients

  • 300g of pumpkin
  • 150g of radicchio
  • 200g of whole spelt flour
  • 80ml of extra virgin olive oil
  • 100ml of plant-based milk
  • Salt to taste

Instructions

  1. Preheat the oven to 180°C (356°F).
  2. In a bowl, combine the flour, oil, and salt. Gradually add the plant-based milk until it forms a smooth dough.
  3. Roll out the dough and place it in a pie dish.
  4. Prepare the filling by steaming the pumpkin until soft, then mix it with sautéed radicchio until well combined.
  5. Spread the filling over the pastry base.
