Ingredients

  • 500g of anchovies, cleaned
  • 50g of raisins
  • 40g of breadcrumbs
  • 30g of pecorino cheese, grated
  • 1 handful of fresh parsley, chopped
  • 1 clove of garlic, minced
  • Salt and pepper to taste
  • Olive oil for spraying

Instructions

  1. Start by soaking the raisins in warm water for about 10 minutes, then drain and set aside.
  2. In a mixing bowl, combine breadcrumbs, grated pecorino cheese, chopped parsley, minced garlic, salt, and pepper. Add the soaked raisins and mix well.
  3. Take each clean anchovy, place a spoonful of the filling on it, and close it by folding it in half. Repeat for all anchovies.
  4. Preheat your air fryer to 180°C (356°F).
  5. Lightly spray the bottom of the air fryer basket with olive oil. Arrange the stuffed anchovies in a single layer in the basket.
  6. Spray the tops of the anchovies lightly with olive oil and cook for about 10 minutes or until golden brown and crispy.
  7. Once cooked, remove the anchovies from the air fryer and serve warm, garnished with additional parsley if desired.
