  • 220g all-purpose flour
  • 100g unsalted butter, chilled
  • 80g yogurt
  • 50g sugar
  • 1 egg yolk
  • 1 pinch of salt
  • 2-3 apples, peeled and sliced
  • 250g fresh cheese (like ricotta)
  • Almonds, sliced (for topping)

Instructions

  1. In a bowl, mix flour, 50g sugar, and a pinch of salt. Add the chilled butter and rub it in until the mixture resembles breadcrumbs.
  2. Stir in the yogurt and egg yolk until the dough forms. Wrap in plastic and chill for 30 minutes.
  3. Preheat the oven to 180°C (350°F).
  4. Roll out the dough on parchment paper into a rough circle.
  5. Spread the fresh cheese over the dough circle, leaving an edge. Arrange the apple slices on top.
  6. Fold the edges of the dough over the apples, pinching to create a rustic border. Sprinkle with remaining sugar and sliced almonds.
  7. Bake for 30-35 minutes or until the crust is golden and apples are tender.
