Baked Carrots with Honey, Goat Cheese, and Green Sauce

Ingredients

  • Carrots – 800g
  • Honey – 2 tbsp
  • Extra virgin olive oil – 3 tbsp
  • Fresh thyme – 1 tbsp
  • Goat cheese – 150g
  • Mixed fresh herbs (parsley, basil, mint) – 50g
  • Walnuts – 30g
  • Salt and pepper – to taste

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Peel the carrots and cut them into sticks.
  3. Place the carrots on a baking tray and drizzle with honey, olive oil, and sprinkle with thyme. Season with salt and pepper.
  4. Bake for 25-30 minutes until tender and slightly caramelized.
  5. Meanwhile, prepare the green sauce by blending the mixed herbs with a drizzle of olive oil and a pinch of salt until smooth.
  6. Toast the walnuts in a pan until golden and chop them roughly.
  7. Once the carrots are done, arrange them on a serving plate.
  8. Top with dollops of goat cheese, drizzle with the green sauce, and sprinkle with chopped walnuts.
