Ingredients

  • 250 g of pasta (short type)
  • 2 medium zucchini
  • 1 ripe peach
  • 150 g of stracciatella cheese
  • Olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Boil water in a large pot, add salt, and cook the pasta according to package instructions until al dente. Drain and let it cool.
  2. While the pasta is cooling, prepare the zucchini cream. In a pan, heat some olive oil and sauté the chopped zucchini until tender. Season with salt and pepper.
  3. Blend the cooked zucchini until smooth, adding a little olive oil if necessary for creaminess.
  4. In a bowl, mix the cooled pasta with the zucchini cream, small cubes of peach, and stracciatella cheese.
  5. Serve chilled, garnished with fresh basil leaves.
