The Chinese meat ravioli are a classic of Asian cuisine, symbolizing prosperity, luck, and sharing. They are a staple during Chinese New Year celebrations and family gatherings, as their preparation represents a moment of conviviality and collaboration.

The dough, made from water and flour, is simple to prepare, as is the pork filling, flavored with ginger and scallions. The most challenging part is the technique of sealing the ravioli, which differs slightly from that of gyoza, but with patience and practice, you’ll gain the right skills!

Chinese meat ravioli can be cooked either on the griddle or steamed: we chose to offer you the first version, resulting in a wrapper with a golden base and a juicy filling. Served with a quick and easy dipping sauce, homemade Jiaozi will be as good as those from a restaurant!

Ingredients

  • 300g all-purpose flour
  • 150ml water
  • 200g ground pork
  • 2 scallions, finely chopped
  • 1 tsp grated ginger
  • 2 tbsp soy sauce
  • Salt to taste
  • 1 tbsp vegetable oil

Instructions

  1. Prepare the Dough: In a bowl, mix flour and water until a smooth dough forms. Cover and let it rest for 30 minutes.
  2. Make the Filling: In another bowl, combine ground pork, scallions, ginger, soy sauce, and salt. Mix well.
  3. Shape the Ravioli: Roll the dough into a thin sheet and cut out circles. Place a teaspoon of filling in the center of each circle. Fold and seal the edges.
  4. Cook: Heat oil in a pan over medium heat. Arrange the ravioli in the pan and cook until the bottoms are golden brown. Add a little water, cover, and steam until cooked through.
  5. Serve: Serve hot with soy sauce or your favorite dipping sauce.
