Ingredients

  • Ricotta cheese – 250g
  • Broccoli – 200g
  • Sausage – 150g
  • Flour – 100g
  • Milk – 250ml
  • Eggs – 3
  • Parmesan cheese – 50g
  • Béchamel sauce – 300ml
  • Salt and pepper – to taste
  • Olive oil – 1 tbsp

Instructions

  1. Prepare the Crespelle Batter: In a bowl, whisk together the flour, milk, and eggs until smooth. Let it rest for 30 minutes.
  2. Cook the Broccoli: Steam the broccoli until tender, then chop finely.
  3. Prepare the Filling: In a pan, cook the sausage until browned. Mix the cooked sausage with ricotta, chopped broccoli, salt, and pepper.
  4. Make the Crespelle: Heat a non-stick pan with olive oil, pour in a ladle of batter, and cook each side until golden. Repeat until the batter is used up.
  5. Assemble the Crespelle: Fill each crespella with the ricotta mixture, roll them up, and place them in a baking dish.
  6. Gratin and Serve: Pour béchamel sauce over the crespelle, sprinkle with Parmesan, and bake at 180°C (356°F) for 20 minutes until golden.
