Ingredients

  • 250g all-purpose flour
  • 125g unsalted butter, at room temperature
  • 100g sugar
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • Jam of your choice (preferably apricot or berry) – about 300g

Instructions

  1. In a large mixing bowl, combine the flour, baking powder, and salt.
  2. In another bowl, cream the butter and sugar until light and fluffy.
  3. Add the egg, egg yolk, and vanilla extract to the butter mixture, mixing well.
  4. Gradually incorporate the dry ingredients into the wet mixture, forming a dough.
  5. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  6. Preheat your oven to 180°C (350°F).
  7. Roll out 2/3 of the dough on a floured surface to fit your tart pan, pressing it into the edges.
  8. Spread the jam evenly over the pastry base.
  9. Roll out the remaining dough and cut it into strips to create a lattice effect over the jam.
  10. Bake for 30-35 minutes, or until golden brown.
  11. Let it cool before slicing and serving.
