Cucumber Boats

Ingredients

  • 2 large cucumbers
  • 200g cherry tomatoes
  • 1 small onion
  • 50g black olives
  • 100g stale bread
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon vinegar
  • Salt and pepper to taste

Instructions

  1. Wash the cucumbers and cut them in half lengthwise. Scoop out the seeds gently using a spoon to create boat shapes.
  2. In a bowl, dice the cherry tomatoes and finely chop the onion and olives.
  3. Soak the stale bread in water, then squeeze it out and crumble it. Combine it with the chopped vegetables.
  4. Drizzle the mixture with olive oil and vinegar, then season with salt and pepper, stirring well to combine.
  5. Fill the cucumber halves with the panzanella mixture, pressing it lightly to pack it in.
  6. Serve immediately or let them chill in the refrigerator for a refreshing appetizer!
