Ingredients

  • 4 large eggs
  • 100g sugar
  • 100g gluten-free flour
  • 1 tsp baking powder
  • 30g cocoa powder
  • 200ml lactose-free cream
  • 100g lactose-free mascarpone
  • 100g fresh raspberries
  • 50g chocolate chips
  • Powdered sugar for decoration

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a bowl, whisk the eggs and sugar until pale and fluffy.
  3. Fold in the gluten-free flour, baking powder, and cocoa powder gently into the egg mixture.
  4. Spread the batter onto the baking tray and bake for 12-15 minutes.
  5. Once baked, allow it to cool completely.
  6. In another bowl, whip the lactose-free cream and mix it with the lactose-free mascarpone until smooth.
  7. Spread the cream mixture over the cooled sponge cake, sprinkle chocolate chips and raspberries on top, and roll it tightly.
  8. Dust the roll with powdered sugar before serving.
