Similar to the original version, gluten-free ladyfingers have a light, slightly spongy texture due to the whipped egg whites. In this recipe, we add a pinch of baking powder and xanthan gum to stabilize the batter and make it fluffier.

Ingredients

  • 100g rice flour
  • 50g potato starch
  • 50g corn starch
  • 3 eggs (separated)
  • 100g sugar
  • 1 tsp baking powder
  • 1 tsp xanthan gum
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a bowl, beat the egg whites until stiff peaks form.
  3. In another bowl, whisk the egg yolks with sugar until creamy.
  4. Gently fold the whipped egg whites into the egg yolk mixture.
  5. Incorporate the rice flour, potato starch, corn starch, baking powder, and xanthan gum carefully into the batter.
  6. Spoon the batter into a piping bag and pipe onto the prepared baking tray in finger-sized shapes.
  7. Sprinkle with powdered sugar and bake for about 15-20 minutes until golden.
  8. Let cool before serving.
