Ingredients

  • 150g hazelnuts
  • 200g dark chocolate
  • 150g butter
  • 200g sugar
  • 4 eggs
  • 150g flour
  • 50g cocoa powder
  • 1 tsp baking powder
  • 500g mascarpone cheese
  • 100ml heavy cream
  • 60ml rum
  • 100g icing sugar

Instructions

  1. Preheat the oven to 180°C (356°F). Grease and flour two round cake pans.
  2. In a bowl, mix together flour, cocoa powder, and baking powder.
  3. In a separate bowl, cream butter and sugar until fluffy, then add the eggs one at a time.
  4. Gradually combine the dry ingredients into the wet mixture.
  5. Pour batter into prepared pans and bake for about 25-30 minutes or until a skewer comes out clean.
  6. Let the cakes cool completely.
  7. For the filling, whip the mascarpone with heavy cream and icing sugar until smooth.
  8. To assemble, soak each layer of sponge cake with the rum syrup, spread mascarpone mixture on the first layer, then top with the second layer.
  9. Cover the entire cake with melted dark chocolate ganache.
  10. Finally, sprinkle crushed hazelnuts on top for garnish.
