Ingredients

  • 400 grams of pasta (your choice)
  • 200 grams of cherry tomatoes
  • 100 grams of fresh basil
  • 50 grams of pine nuts
  • 50 grams of parmesan cheese
  • 2 cloves of garlic
  • 100 ml of extra virgin olive oil
  • Salt to taste

Instructions

  1. Cook the pasta in boiling salted water according to package directions until al dente.
  2. While the pasta is cooking, prepare the pesto: in a blender, combine basil, pine nuts, garlic, parmesan, and olive oil. Blend until smooth.
  3. Once the pasta is cooked, drain it, reserving a cup of the cooking water.
  4. Add the pesto to the pasta, mixing well. If needed, add a little reserved pasta water to achieve the desired creaminess.
  5. Cut cherry tomatoes in half and add them to the pasta. Toss gently to combine.
  6. Serve immediately, garnished with additional parmesan and basil if desired.
