Ingredients

  • 400g of pasta (preferably calamarata)
  • 300g of romanesco broccoli
  • 100g of fresh spinach
  • 150g of crispy guanciale
  • 2 tablespoons of olive oil
  • Salt to taste
  • Grated cheese for serving

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  2. While the pasta cooks, prepare the broccoli: wash and cut it into florets.
  3. In a frying pan, heat the olive oil over medium heat and add the guanciale, cooking until crispy. Remove and set aside.
  4. In the same pan, add the broccoli and sauté for a few minutes until tender. Add the fresh spinach and cook until wilted.
  5. Blend the cooked vegetables with a little cooking water from the pasta to create a creamy sauce.
  6. Drain the pasta and return it to the pot. Pour in the broccoli cream and mix well over low heat.
  7. Serve with crispy guanciale on top and a sprinkle of grated cheese.
