What to prepare with a beautiful mix of fresh mushrooms? Of course, a classic and irresistible Pasta with Mushrooms! In this recipe, we’ve used porcini, cardoncelli, and champignon to create a simple and appetizing sauce that cooks in under fifteen minutes.

The sautéed mushrooms can be paired with your favorite pasta shape: penne, rigatoni, fettuccine, or pappardelle are all excellent for enhancing the flavor and texture of the true stars of this dish. To enjoy them at their best, we decided not to add cream or pancetta, like in the famous pennette alla boscaiola, resulting in a light yet flavorful first course.

Starting from the basic version of Pasta with Mushrooms, you may choose to enrich it with other ingredients of your liking. Here are a few ideas:

  • Tagliatelle with mushrooms and sausage
  • Spaghetti with mushrooms and taleggio
  • Pasta with mushrooms and speck
  • Fettuccine with mushrooms and burrata
  • Tagliatelle with cuttlefish and mushrooms

Ingredients

  • 400g of pasta
  • 300g mixed fresh mushrooms
  • 2 cloves of garlic
  • 4 tablespoons olive oil
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions

  1. Clean the mushrooms and slice them.
  2. In a pan, heat the olive oil and sauté the minced garlic.
  3. Add the mushrooms and cook until they’re golden and tender.
  4. Cook the pasta according to package instructions, then drain.
  5. Toss the pasta with the sautéed mushrooms and add salt and pepper to taste.
  6. Garnish with fresh parsley before serving.
