Ingredients

  • 400g whole grain mixed pasta
  • 300g fresh mussels
  • 200g pumpkin, diced
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 liter vegetable broth
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, cooking until transparent.
  2. Then, add the diced potatoes and pumpkin, cooking for about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Simmer for 15 minutes until the vegetables are tender.
  4. Add the fresh mussels to the pot, covering it and cooking for another 5-7 minutes, until the mussels open.
  5. Meanwhile, cook the mixed pasta according to the package instructions in a separate pot, reserving some pasta water.
  6. Once the pasta is al dente, drain it and add it to the pot with the pumpkin, potatoes, and mussels. Toss everything together, adding reserved pasta water if necessary to achieve a creamy consistency.
  7. Season with salt and pepper to taste, and garnish with fresh parsley before serving.
