Ingredients

  • 400g pasta (your choice)
  • 300g zucchini
  • 150g stracchino cheese
  • 1 clove garlic
  • Fresh thyme
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Boil salted water in a large pot and cook the pasta according to the package instructions.
  2. While the pasta is cooking, slice the zucchini and mince the garlic.
  3. In a frying pan, heat olive oil and sauté the garlic until fragrant.
  4. Add the zucchini and cook until tender but slightly crunchy.
  5. Once the pasta is al dente, reserve some cooking water and drain the pasta.
  6. Combine the pasta with the zucchini in the frying pan, adding stracchino cheese and a splash of reserved cooking water to create a creamy sauce.
  7. Season with salt, black pepper, and fresh thyme to taste. Serve immediately.
