Ingredients

  • 400g pasta (your choice)
  • 200g zucchini flowers
  • 300g sweet prawns, peeled
  • 50g pine nuts
  • 100ml extra virgin olive oil
  • 50g Parmesan cheese, grated
  • Salt and black pepper to taste
  • 1 clove of garlic
  • Juice of half a lemon

Instructions

  1. Begin by cleaning the zucchini flowers: remove the pistil and any tough stems.
  2. In a blender, combine the zucchini flowers, garlic, pine nuts, and Parmesan cheese. Blend smoothly, while gradually adding the olive oil to create a creamy pesto.
  3. Cook the pasta in salted boiling water according to the package instructions until al dente.
  4. In a skillet, heat a tablespoon of olive oil over medium heat and add the sweet prawns. Cook for about 2-3 minutes, or until they turn pink.
  5. Once the pasta is cooked, drain and reserve a cup of pasta water.
  6. Add the pasta to the skillet with the prawns, and incorporate the zucchini flower pesto. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.
  7. Season with salt, black pepper, and a squeeze of lemon juice. Toss everything together.
  8. Serve hot, garnished with extra pine nuts and Parmesan cheese if desired.
