Ingredients

  • 150g cocoa Pavesini cookies
  • 200g dark chocolate
  • 100g apricot jam
  • 200ml heavy cream
  • Powdered sugar for garnish

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water, or microwave in short bursts, stirring until smooth.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. Carefully fold the melted chocolate into the whipped cream until fully combined.
  4. Spread a layer of apricot jam on one side of the cocoa Pavesini.
  5. Sandwich two Pavesini together with the jam facing up and top with a dollop of the chocolate cream mixture.
  6. Repeat until all Pavesini are used, creating layered stacks.
  7. Dust with powdered sugar before serving.
  8. Chill in the refrigerator for at least 30 minutes for a firmer texture.
