Ingredients

  • 320 g Arborio rice
  • 30 g dried porcini mushrooms
  • 1 onion, finely chopped
  • 50 g butter
  • 1 l vegetable broth
  • 100 ml white wine
  • 50 g Parmesan cheese, grated
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Soak the dried porcini mushrooms in hot water for about 30 minutes, then strain and chop them finely.
  2. In the Bimby®, add the chopped onion and butter; sauté for 3 minutes at 100°C on speed 1.
  3. Add the Arborio rice and toast for 3 minutes at 100°C on reverse speed soft.
  4. Pour in the white wine and let it evaporate for 2 minutes at 100°C on reverse speed soft.
  5. Add the chopped porcini mushrooms and vegetable broth; cook for 18 minutes at 100°C on reverse speed soft.
  6. Once cooked, add the grated Parmesan cheese, salt, and pepper; mix for 1 minute on speed 1.
  7. Serve hot, garnished with parsley.
