Ingredients

  • 300g of rice
  • 200g of lentils
  • 1 onion
  • 1 carrot
  • 1 stalk of celery
  • Extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Vegetable broth

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. Chop the onion, carrot, and celery. In a pan, heat some olive oil and sauté the chopped vegetables until soft.
  3. Add the lentils and stir for a few minutes before adding the vegetable broth.
  4. Bring to a boil and then reduce heat, simmering until lentils are tender.
  5. Add the rice, stir well, and allow to cook until the rice is done, adding more broth if necessary.
  6. Season with salt and pepper, and drizzle with more olive oil before serving.
