Ingredients

  • 4 colorful bell peppers
  • 100g black olives, pitted
  • 50g capers, rinsed
  • 100g sun-dried tomatoes, chopped
  • 200g stale bread, cubed
  • 2 cloves garlic, minced
  • Fresh basil leaves, for garnish
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Wash the bell peppers, slice them in half, and remove the seeds.
  3. In a bowl, combine the olives, capers, sun-dried tomatoes, minced garlic, and cubed bread. Drizzle with olive oil, and season with salt and pepper.
  4. Stuff each pepper half with the prepared mixture, packing it in well.
  5. Place the stuffed peppers in a baking dish, drizzle a little more olive oil on top, and cover with foil.
  6. Bake in the preheated oven for 30-35 minutes, removing the foil for the last 10 minutes to allow the tops to get golden brown.
  7. Garnish with fresh basil before serving.
