Ingredients

  • 1 kg (2.2 lbs) veal roast (capello del prete)
  • 2 cups of beef broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • Olive oil
  • Salt and pepper to taste
  • Fresh rosemary
  • Fresh thyme
  • 1 cup of white wine
  • 1 tablespoon of flour (optional for thickening)

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. In a heavy pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Season the veal roast with salt and pepper, then sear it in the pot until browned on all sides.
  4. Deglaze the pan with white wine, scraping up any brown bits from the bottom.
  5. Add beef broth, fresh rosemary, and thyme to the pot. Cover and transfer it to the oven.
  6. Cook for 2-3 hours, basting occasionally, until the meat is tender.
  7. Remove the roast from the pot, cover with foil, and let it rest.
  8. If desired, thicken the remaining sauce with flour and simmer until creamy.
  9. Slice the roast and serve it with the gravy over the top and roasted potatoes on the side.
