Creamy mushroom scaloppine is a delicious variation of the classic Italian dish, combining tender veal with a rich and velvety mushroom sauce. The addition of cream elevates the dish, keeping the meat juicy while the mushrooms, in two textures, release their full flavor in every bite. We chose a mix of porcini, chanterelles, button, and portobello mushrooms to celebrate seasonal ingredients, but feel free to substitute with what you have on hand!

Serve creamy mushroom scaloppine with a simple side dish like mashed potatoes, soft polenta, or sautéed vegetables to complete a wholesome and irresistible meal.

Ingredients

  • 500g veal scaloppine
  • 250g mixed fresh mushrooms (porcini, chanterelles, button, portobello)
  • 200ml heavy cream
  • 2 tablespoons olive oil
  • 1 clove garlic
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Begin by cleaning the mushrooms and slicing them into even pieces.
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
  3. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes until they soften and release their juices. Season with salt and pepper.
  4. Once the mushrooms are cooked, remove them from the skillet and set aside.
  5. In the same skillet, add the veal scaloppine and cook for 2-3 minutes on each side until golden brown. Season lightly with salt and pepper.
  6. Reduce the heat and pour in the heavy cream, stirring to combine. Add the cooked mushrooms back into the skillet.
  7. Let everything simmer together for an additional 5 minutes until the sauce thickens slightly.
  8. Garnish with fresh parsley before serving.
