Ingredients

  • 6 eggs
  • 200g mushrooms (champignon or porcini)
  • 1 onion
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  1. Clean and slice the mushrooms. Chop the onion finely.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the mushrooms and cook until they are tender and any moisture has evaporated.
  4. In a bowl, beat the eggs and season with salt and pepper.
  5. Pour the beaten eggs into the skillet, ensuring the mushrooms and onions are evenly distributed.
  6. Cook on low heat for about 5-7 minutes until the edges start to set.
  7. Cover the skillet with a lid and let it cook for another 5 minutes or until the frittata is fully set but still moist in the center.
  8. Slide the frittata onto a plate and let it cool slightly before serving.
