Ingredients

  • 200 g (7 oz) white chocolate
  • 300 g (10.5 oz) cantaloupe melon, pureed
  • 300 ml (10 fl oz) heavy cream
  • 3 g (0.1 oz) gelatin sheets
  • 50 g (1.8 oz) praline almonds, chopped
  • Fresh mint for garnish

Instructions

  1. Begin by soaking the gelatin sheets in cold water.
  2. In a saucepan, heat the cream until it simmers, then remove from heat and add the gelatin, stirring until dissolved.
  3. In a bowl, melt the white chocolate and then combine it with the cream mixture.
  4. Add the pureed melon to the chocolate cream and mix until smooth.
  5. Chill the mixture in the refrigerator for at least 4 hours until set.
  6. Once set, whip the remaining cream until soft peaks form and gently fold it into the melon mixture.
  7. Serve the Namelaka al melone in individual bowls, topped with chopped praline almonds and fresh mint.
