Meringue with Pastry Cream and Peaches – A Delightful Italian Dessert

Ingredients

  • 4 large egg whites
  • 250g granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 250ml milk
  • 3 large egg yolks
  • 75g granulated sugar for the cream
  • 30g all-purpose flour
  • 1 teaspoon cornstarch
  • 1 zest of lemon
  • Cinnamon powder to taste
  • 4 ripe peaches
  • 50g dark chocolate flakes

Instructions

  1. Preheat your oven to 90°C (194°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whip the egg whites until foamy. Gradually add the sugar and continue to beat until stiff peaks form.
  3. Stir in the vanilla extract and lemon juice. Pipe or spoon the meringue onto the baking sheet in desired shapes.
  4. Bake for around 2 hours, then let them cool in the oven with the door slightly ajar.
  5. For the pastry cream, heat the milk in a saucepan. In a separate bowl, whisk together the egg yolks, sugar, flour, cornstarch, and lemon zest. Gradually add the hot milk and return the mixture to the saucepan. Cook over medium heat until thickened.
  6. Once thickened, remove from heat, add the cinnamon powder, and let it cool.
  7. For the peaches, peel and slice them. In a pan, caramelize with sugar over medium heat until soft and golden.
  8. Assemble desserts by filling meringues with pastry cream, topping them with caramelized peaches and dark chocolate flakes.
