- 100g pistachios, chopped
- 80g lard
- 200g fresh spinach
- 4 carrots
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 180°C (356°F).
- Season the pork fillet with salt and pepper.
- Wrap the fillet in lard slices.
- Roll the wrapped fillet in chopped pistachios, pressing gently to adhere.
- Place the fillet on a baking tray and bake for 25-30 minutes.
- Meanwhile, peel and slice the carrots, toss with olive oil, salt, and pepper, and roast alongside the pork.
