Ingredients

  • 2 cups of fresh spinach
  • 1 cup of flour
  • 2 eggs
  • 1 ¾ cups of milk
  • Salt to taste
  • 1 tablespoon of olive oil
  • Smoked salmon
  • Cream cheese

Instructions

  1. In a blender, combine spinach, flour, eggs, milk, salt, and olive oil. Blend until smooth.
  2. Heat a non-stick pan over medium heat and pour a ladle of the mixture, spreading it evenly.
  3. Cook until the edges start to lift, then flip and cook for another minute.
  4. Repeat with the remaining batter.
