Ingredients

  • 200g pasta (your choice)
  • 1 medium cauliflower, cut into florets
  • 500ml oat milk
  • 2 tablespoons olive oil
  • 3 tablespoons nutritional yeast
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon flour (for béchamel)
  • Breadcrumbs for topping

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Boil the pasta in salted water according to package instructions, but reduce the cooking time by 2 minutes to keep it al dente.
  3. In a saucepan, heat the olive oil and add flour; mix to make the roux.
  4. Slowly add oat milk while whisking to prevent lumps, then add garlic powder, salt, pepper, and nutritional yeast. Cook until thickened.
  5. In a baking dish, layer the pasta, cauliflower florets, and vegan béchamel.
  6. Top with breadcrumbs and bake for 25-30 minutes until golden brown.
  7. Let it cool slightly before serving and enjoy!
