1. Start by washing and slicing the eggplants into 1/2-inch thick rounds. If you prefer, sprinkle them with salt and let them sit for about 30 minutes to draw out excess moisture and bitterness.
2. After 30 minutes, rinse the eggplant slices under cold water and pat them dry.
3. In a mixing bowl, combine the eggplant slices, olive oil, salt, pepper, and any optional seasonings like garlic powder or dried herbs. Toss to coat evenly.
4. Preheat the air fryer to 375°F (190°C) for about 3-5 minutes. Then, place the eggplant slices in a single layer in the air fryer basket.
5. Cook for 15-20 minutes, flipping the eggplant halfway through, until they are golden brown and crispy.
6. Remove from the air fryer, and serve warm, drizzled with additional olive oil if desired. Enjoy!
