Ingredients

  • 3 medium zucchinis
  • 4 eggs
  • 50g grated Parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your air fryer to 180°C (356°F).
  2. Slice the zucchinis into thin rounds.
  3. Spray olive oil in the air fryer basket, add zucchini slices, and roast for about 10 minutes.
  4. In a bowl, beat the eggs, add grated Parmesan, salt, and pepper.
  5. Add the roasted zucchini to the egg mixture and combine well.
