Ingredients

  • 300 g Arborio rice
  • 150 g cooked ham, diced
  • 200 g peas (fresh or frozen)
  • 250 g scamorza cheese, diced
  • 50 g grated Parmesan cheese
  • 1 liter vegetable or chicken broth
  • 1 medium onion, finely chopped
  • Olive oil for sautéing
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat a drizzle of olive oil and sauté the chopped onion until softened.
  2. Add the Arborio rice and toast for a few minutes, stirring constantly.
  3. Gradually add the broth, one ladle at a time, stirring frequently until the rice is just under al dente.
  4. Remove from heat and mix in the diced cooked ham, peas, and scamorza cheese.
  5. Season with salt and pepper, then transfer the mixture to a baking dish and sprinkle the grated Parmesan on top.
  6. Bake in a preheated oven at 180°C (350°F) for about 20-25 minutes, or until the top is golden brown and crispy.
  7. Remove from the oven, let cool slightly, and serve warm.
