Ingredients

  • 2 branzino (about 1 kg total)
  • 300 g of potatoes
  • 200 g of zucchini
  • 200 g of cherry tomatoes
  • 100 g of breadcrumbs
  • 50 g of grated Parmigiano-Reggiano cheese
  • Fresh parsley, chopped
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 1 liter of water
  • 1 lemon

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Prepare a court bouillon using water, lemon slices, salt, and bring it to a boil.
  3. Clean the branzino and immerse them in the boiling court bouillon for about 5 minutes.
  4. Meanwhile, slice the potatoes and zucchini.
  5. In a baking dish, layer the potatoes, zucchini, and halved cherry tomatoes.
  6. Place the branzino on top of the vegetables.
  7. In a bowl, mix the breadcrumbs, grated cheese, chopped parsley, salt, and pepper. Drizzle with olive oil, then sprinkle over the branzino.
  8. Bake in the preheated oven for about 25-30 minutes until golden brown.
  9. Serve hot, garnished with fresh parsley.
