Ingredients

  • 300g Arborio rice
  • 200g peas
  • 150g speck, diced
  • 200g mozzarella cheese, diced
  • 50g grated Parmesan cheese
  • Breadcrumbs, for topping
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for drizzling

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Cook the Arborio rice in salted boiling water until al dente. Drain and set aside.
