Ingredients

  • 300g cod fillet
  • 300g boiled potatoes
  • 2 tablespoons parsley, chopped
  • Salt to taste
  • Pepper to taste
  • 1 egg
  • 100g cornflakes, crushed
  • Olive oil for brushing

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Boil the potatoes until tender, then mash them.
  3. Cook the cod fillet, then flake it and mix with the mashed potatoes.
  4. Add chopped parsley, salt, and pepper to the mixture.
  5. Shape the mixture into small croquettes.
  6. Beat the egg in a bowl, dip each croquette in the egg, then coat with crushed cornflakes.
  7. Place the croquettes on a baking sheet lined with parchment paper.
  8. Brush with olive oil and bake for 20 minutes or until golden brown.

Serve hot with your choice of dipping sauce.
