Ingredients

  • 250g couscous
  • 200g salmon fillet
  • 100g feta cheese
  • 200g cherry tomatoes
  • 150g canned chickpeas
  • Fresh basil leaves
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the couscous according to package instructions and set aside to cool.
  2. In a skillet, cook the salmon fillet until it’s golden brown on both sides, then flake it into bite-sized pieces.
