Ingredients

  • 8 red mullets
  • 100g all-purpose flour
  • 300ml vegetable oil for frying
  • 1 carrot
  • 1 onion
  • 1 celery stalk
  • 100ml white wine vinegar
  • 100ml water
  • 50g sugar
  • Salt and pepper to taste

Instructions

  1. Begin by cleaning the red mullets, removing the heads and bones, and setting them aside to prepare a fish stock.
  2. In a saucepan, add the fish bones, carrot, onion, and celery. Cover with water and let it simmer for about 30 minutes to create a flavorful stock.
  3. Strain the stock and use it to prepare the sweet and sour sauce. In a pan, combine vinegar, water, sugar, and the fish stock. Simmer until the sugar dissolves and the sauce thickens slightly.
  4. Season the mullet fillets with salt and pepper. Dredge them in flour, shaking off any excess.
  5. Heat the vegetable oil in a frying pan. Once hot, fry the fillets until golden and crispy, about 3-4 minutes on each side.
  6. Drain the fried mullets on paper towels to remove excess oil.
  7. Serve the crispy mullets drizzled with the sweet and sour sauce.
