Ingredients

  • 300g spaghetti
  • 200g agretti
  • 3 cloves garlic
  • 50ml extra virgin olive oil
  • 1 red chili pepper
  • Salt to taste
  • Pepper to taste

Instructions

  1. Clean the agretti by removing the roots and washing them thoroughly under running water.
  2. In a large pot, bring salted water to a boil. Add the spaghetti and cook until al dente.
  3. Meanwhile, in a skillet, heat the olive oil over medium heat and add the minced garlic and chopped chili pepper. Sauté for a few minutes until fragrant.
  4. Add the agretti to the skillet and cook for about 5 minutes, stirring occasionally until they are tender.
  5. Drain the spaghetti, reserving a cup of pasta water. Add the spaghetti to the skillet with the agretti.
  6. Toss everything together, adding a little pasta water if needed to create a creamy sauce.
  7. Season with salt and pepper to taste and serve immediately.
