The base is traditional Sardinian fregola, cooked like a risotto and enriched with fresh seafood – clams, mussels, razor clams, and sea almonds – as well as an emulsion of samphire, a wild herb with a savory taste that adds an intense and unexpected marine note to the dish. Elegant in presentation and surprising in taste, fregola with seafood and samphire is the expression of a cuisine that embraces the future while deeply rooted in Sardinian tradition, perfect for those seeking a gourmet first course that captures the essence of the sea.

Ingredients

  • 400g fregola
  • 200g clams
  • 200g mussels
  • 200g razor clams
  • 100g sea almonds
  • 100g samphire
  • 2 cloves garlic
  • 1 small onion
  • 100ml white wine
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the seafood under cold water to remove any sand or impurities.
  2. In a large pan, heat the olive oil and sauté the minced garlic and onion until translucent.
  3. Add the clams and mussels, then pour in the white wine. Cover until the shells open.
  4. Remove the seafood, leaving the liquid in the pan. Strain the liquid to remove any grit.
  5. Add fregola to the liquid and cook gradually adding water as needed, similar to risotto.
  6. Stir in the razor clams and sea almonds during the last few minutes of cooking.
  7. Finish by gently folding in the samphire and the cooked seafood.
  8. Season with salt and pepper and garnish with fresh parsley before serving.
