Ingredients

  • 150g asparagus
  • 100g strawberries
  • 50g arugula
  • 40g Parmesan Reggiano DOP
  • 30g almonds
  • Olive oil, salt, and pepper to taste

Instructions

  1. Trim and blanch the asparagus in boiling water for 3-4 minutes. Drain and cool.
  2. Slice the strawberries and set aside.
  3. In a bowl, blend Parmesan with a little water to create a smooth cream.
  4. Toast the almonds in a pan until golden.
  5. Arrange the asparagus, strawberries, and arugula on a plate.
  6. Drizzle with olive oil, season with salt and pepper, and add the Parmesan cream.
