  2. In a pot, mix the melon puree with sugar and cornstarch. Stir until well combined.
  3. Gradually add water, continuing to stir.
  4. Heat the mixture on medium heat, stirring until it thickens.
  5. Pour the mixture into a rectangular mold and refrigerate until firm.
  6. Once set, cut into cubes.
  7. Melt dark chocolate with coconut oil.
  8. Dip each melon cube into the chocolate and garnish with chopped pistachios.
  9. Refrigerate until the chocolate sets.
