Ingredients

  • 150g dark chocolate (70%)
  • 150g butter
  • 150g sugar
  • 5 eggs
  • 150g almond flour
  • 200g raspberry jam
  • Fresh raspberries
  • 200g heavy cream

Instructions

Step 1: Preheat the oven to 180°C (356°F). Melt the chocolate and butter in a bain-marie. Allow to cool slightly.

Step 2: Separate the eggs. Beat the yolks with sugar until frothy. Stir in the melted chocolate mixture and almond flour.

Step 3: Whip the egg whites until stiff and fold gently into the chocolate batter.

Step 4: Pour the batter into a lined cake tin. Bake for about 45 minutes. Let cool.

Step 5: Cut the cake in half. Spread raspberry jam on one half and top with fresh raspberries. Place the other half on top.

Step 6: Heat the cream and pour over chopped chocolate to make ganache. Stir until smooth and glossy.

Step 7: Pour ganache over the cake. Let it set before serving.
