Ingredients

  • 3 large eggs
  • 100 g (1/2 cup) granulated sugar
  • 250 g (1 cup) mascarpone cheese
  • 200 ml (3/4 cup) strong coffee, cooled
  • 30 g (1/4 cup) gluten-free cocoa powder
  • 1 packet gluten-free ladyfinger cookies (or homemade)

Instructions

  1. In a large bowl, whip the egg whites until stiff peaks form.
  2. In another bowl, combine the egg yolks with the sugar and whisk until light and fluffy.
  3. Add the mascarpone cheese to the whipped egg yolk mixture and fold gently until combined.
  4. Carefully fold in the whipped egg whites into the mascarpone mixture.
  5. Dip the gluten-free ladyfingers quickly into the cooled coffee, making sure they are not soaked.
  6. Layer the dipped ladyfingers in a serving dish and spread a layer of mascarpone cream on top.
  7. Repeat the layers until all ingredients are used, ending with a layer of mascarpone cream on top.
  8. Refrigerate the tiramisu for at least 4 hours before serving; overnight is best.
  9. Before serving, dust the top with cocoa powder.
