Ingredients

  • 250g fresh mozzarella (fiordilatte)
  • 100ml extra virgin olive oil
  • Juice of 1 lemon
  • Fresh basil leaves
  • 30g homemade pesto
  • 20g toasted pine nuts
  • 6 oil-packed anchovy fillets
  • Salt and pepper to taste

Instructions

  1. Slice the mozzarella and place it in a shallow dish.
  2. In a bowl, mix extra virgin olive oil, lemon juice, and a few torn basil leaves.
  3. Pour the marinade over the mozzarella slices, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.
  4. Before serving, drizzle the mozzarella with homemade pesto.
  5. Sprinkle toasted pine nuts and lay anchovy fillets on top.
  6. Season with salt and pepper to taste.
  7. Serve with rustic bread or Genoese focaccia.
