Ingredients

  • 300g Pavesini biscuits
  • 500g mascarpone cheese
  • 150g dark chocolate
  • 3 ripe mangoes
  • 200ml milk
  • 100g sugar
  • 3 eggs
  • Cocoa powder for dusting

Instructions

  1. Peel and dice the mangoes, setting aside a few slices for garnish.
  2. Melt the dark chocolate in a double boiler or microwave.
  3. Separate the egg yolks from the whites. Beat the yolks with sugar until creamy.
  4. Add the mascarpone to the yolk mixture, blending well.
  5. Whip the egg whites to stiff peaks and gently fold them into the mascarpone mixture.
  6. Dip Pavesini biscuits in milk and layer them in a dish.
  7. Spread half of the mascarpone mixture over the biscuits, followed by half of the diced mango and melted chocolate.
  8. Repeat the layers and finish with a dusting of cocoa powder.
  9. Chill in the refrigerator for at least 2 hours before serving.
  10. Garnish with reserved mango slices before serving.
