Ingredients

  • 300g Arborio rice
  • 1kg mussels
  • 200g fava beans (fresh or frozen)
  • 100g pecorino cheese, grated
  • 1 small onion
  • 2 cloves of garlic
  • 1 liter of vegetable broth
  • 1 glass of white wine
  • Fresh mint leaves for garnish
  • Zest of 1 lemon
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Begin by cleaning the mussels under cold water and scrubbing their shells. Discard any that are open and do not close when tapped.
  2. In a large pot, heat a drizzle of olive oil over medium heat, then add chopped onion and minced garlic. Sauté until translucent.
  3. Add the mussels and white wine, cover, and let them cook for about 5 minutes until they open. Remove from heat and set aside, reserving the cooking liquid.
  4. In the same pot, add the arborio rice and toast for 2-3 minutes until it’s slightly translucent.
  5. Gradually add the vegetable broth and reserved mussel cooking liquid, one ladle at a time, stirring frequently until absorbed before adding more.
  6. Once the rice is al dente, mix in the fava beans and grated pecorino cheese, stirring well. Adjust salt and pepper to taste.
  7. Serve the risotto hot, garnished with mussels, mint leaves, and a sprinkle of lemon zest.
