Ingredients

  • 400g Orecchiette pasta
  • 600g pork ribs
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • 400g canned tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated cheese for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened.
  2. Add the pork ribs and brown them on all sides.
  3. Pour in the canned tomatoes and season with salt and pepper. Cover and let it simmer for about 1.5 hours until the ribs are tender.
  4. Meanwhile, bring a pot of salted water to a boil. Cook the orecchiette according to package instructions until al dente.
  5. Once the ribs are cooked, shred the meat and mix it back into the sauce.
  6. Drain the orecchiette and combine them with the rib sauce, mixing well to coat.
  7. Serve hot, topped with grated cheese.
