Ingredients
- 400g flour
- 200ml warm water
- 250g semi-aged caciotta cheese
- Fresh marjoram
- Zest of 1 lemon
- 800g fresh tomatoes
- Salt to taste
- Olive oil
Instructions
- In a large bowl, combine the flour and warm water, kneading until you form a smooth and elastic dough.
- Wrap the dough in plastic wrap and let it rest for 30 minutes.
- For the filling, crumble the semi-aged caciotta cheese in a bowl and mix with fresh marjoram and lemon zest.
- Roll out the dough thinly and cut into squares.
- Place a spoonful of filling on each square, fold, and seal the edges carefully.
- In a pot, heat olive oil, add chopped tomatoes, and simmer until sauce thickens. Season with salt.
- Cook the ravioli in boiling salted water until they float, which indicates they are done.
- Drain and serve topped with the fresh tomato sauce.
